There is nothing more French that a good mousse au chocolat, every French mother knows how to make one, it is sacred. Here is the very classical and absolutely delicious recipe of Gaston Lenôtre, a famous pastry Chef. Be careful when selecting your chocolate, a good chocolate is the secret of a good mousse!
For 5 people:
- 3 egg whites
- 125 g great chocolate (70%)
- 2 egg yolks
- 75 g unsalted butter
- 20 g icing sugar
Melt chocolate in a double boiler or a metal bowl set over a pan of simmering water. Remove from heat and add the butter while stirring until it blends completely. Add your yolks, stir.
In another bowl, beat the egg whites with a rotary or electric beater while slowly adding the sugar and stop when they are stiff and shiny.
Combine the chocolate mixture into the bowl with the egg white mixture and gently mixture together completely. Cover and fully chill before serving. You can serve it with homemade biscuits (like sablé Breton, I’ll share the recipe with you another day) or brioche…
